- 150g cashews

- 100g medjool dates, pitted and chopped

- 1 tsp ground cinnamon

- ¼ tsp grated nutmeg

- 2 tbsp date purée

- 90g rolled oats

- 160g wholemeal flour

- 2 tbsp hemp seeds

- 30g sunflower seeds

- 30g unsweetened desiccated coconut

- 2 tbsp cashew butter

- 75ml pure maple syrup

- 70g dried chopped apples
1 Line a 20x20cm baking tin. Blitz the cashews, dates, cinnamon, nutmeg and date purée in a food processor for 30 seconds. Transfer into a bowl and stir in the oats, flour, hemp seeds, sunflower seeds and coconut.
2 Melt the cashew butter and maple syrup into a pan until combined. Pour over the dry ingredients and add dried apples. Stir, then press the mixture into the tin.
Chill for 30 minutes.
