400g fillet or sirloin steak -
1 tsp sunflower oil -
2 tsp baharat spice mix -
1 yellow pepper, deseeded and cut into strips -
2 red peppers, deseeded and cut into strips -
1 red onion, thinly sliced -
A handful of coriander leaves -
To serve:
4 soft wholemeal tortilla wraps -
4 tbsp reduced-fat guacamole -
Low-fat natural yoghurt -
1 little gem lettuce, shredded
1 Remove and discard any of the visible fat from the steak and then cut into thin strips. Place the beef in a bowl with the oil and spice mix and coat in the spice.
2 Heat a large, non-stick frying pan. When hot add the beef, peppers and onions and stir-fry over a high heat for seven to eight minutes, until lightly browned and the peppers and onions have softened. Stir in the coriander.
3 Serve the beef and pepper mix wrapped in warm wholemeal tortillas with a little guacamole, low-fat yoghurt and shredded lettuce.
Pippa’s Top Tip: As an alternative to tortillas, wrap the filling in a large iceberg lettuce leaf.
