It’s widely reported that here in the UK the majority of people are not eating enough fibre every day – so why not try and boost your intake this pancake day? This recipe, from The Groovy Food Company, offers a whopping 75 percent of our daily recommended fibre intake and the result is delicious, too. Stack them high and enjoy!
Ingredients
28g coconut flour
3 large eggs
2 tbsp butter
6 tbsp milk (Any kind)
1 tsp baking powder
1 tbsp coco powder
30g coconut sugar
1 lemon
Agave nectar
1 cup of raspberries
1 banana
50g sunflower seeds
Method
Beat the eggs in a bowl until frothy. Next, add the milk, coconut flour, coconut sugar, baking powder, coco powder, and shave the skin of one lemon into the mixture and mix all together until you have a smooth batter. Leave for a few minutes to allow the coconut flour to absorb all the ingredients.
Warm the butter in the pan (on a medium heat) until melted, then add approximately one tablespoon of mixture flat into the pan to begin to cook the pancake.
Wait until the pancake begins to bubble on the top, then flip and cook on the other side for a further 30 seconds.
Repeat until the batter is used up.
To serve
Stack the pancakes on a plate then scatter the raspberries, banana and sunflower seeds over the top. Finish off with a drizzle of agave nectar. Eat and enjoy.
